Apple & Blackberry Cake

Now that we have plenty of apples and Mr HfH has been blackberry picking; the next logical step is baking.... I came across this recipe a while ago, but it only had the apple, I added the blackberry and it is rather good, you could experiment with other fruits. Its great warmed with a dollop of creme fraiche or cream or just simply on its own with a nice cup of tea. It has a consistency of a bread pudding, but is quite light - hope you enjoy it.

2 eggs 115g Caster Sugar (adjust sugar to your liking) 2 heaping teaspoons cinnamon 125ml vegetable oil 4 Cooking Apples

A couple of handfuls of blackberries 200g plain flour 2 teaspoons baking baking powder

A little demerara sugar [if !supportLineBreakNewLine] [endif]

Preheat oven to 180°.

  • In a large bowl, mix the eggs, sugar, cinnamon and oil.

  • Peel and slice or rough chop the apples and along with the blackberries add to mixture in bowl making sure you coat it well without breaking down the fruit.

  • Sieve the flour and baking powder and add to the ingredients in the bowl. Mix well until all of the flour is absorbed by the wet ingredients.

  • Pour mixture into a greased one 9x13" or two 9″cake tins and sprinkle a little demerara sugar.

  • Bake for approximately 55 - 60 minutes until golden brown, leave to cool in cake tin until cold.
